After close to 50 years in business, Southport institution The Swan Restaurant and Takeaway has finally secured its coveted third star in the latest edition of the Michelin Guide.
In what critics are calling “a landmark moment for British gastronomy,” The Swan has been recognised for its quality of ingredients, consistency, presentation, technique, and mastery of the deep-fat fryer.
The Swan now joins Moor Hall in Aughton as the only three-starred restaurants in the area – and owner William Defty and his team now stand alongside the likes of Gordon Ramsay, Marco Pierre-White, and Heston Blumenthal among the all-time greats of British cuisine.
Michelin reviewers heaped particular praise on the énorme part de tarte au steak and trio de saucisses de porc avec une sauce appropriée. However, it was The Swan’s iconic dish of Cod dans la pâte et frites, accompanied by a seasonal medley of crushed légumes, pain et beurre, and an infusé à la Tetley, that sealed the prestigious award.
Now, in a bold step that underlines their ongoing dedication to culinary innovation, The Swan have confirmed they are giving serious consideration to cutting the bread and butter diagonally, rather than straight across the middle.
